White tea is the least processed of all teas, made from young buds and leaves. Xah's specialty white teas include Platinum Needle from Coonoor and White Peony (Bai Mudan) from the Nilgiris: delicate, floral and lightly sweet. Brew at around 75–80°C to taste them at their best.
